About two weeks ago, my sister made these incredible Amaretti cookies and I can’t stop raving about them! They are so good and perfect with a morning or afternoon coffee, and they definitely make you feel a little Italian if you happen not to be Italian already!
Today, I’d like to share her incredible recipe with you so that more people can enjoy these delicious cookies.
1 1/2 cup sugar
900 grams crushed almonds
1 tbsp almond extract
1/2 tsp cocoa powder
1/2 tsp baking powder
Whip eggs for 10 minutes. Add sugar and beat for another 15 minutes. Fold in almond extract, cocoa powder, and baking powder. Fold almonds in last. Roll into balls about 1 inch in diameter, and then roll balls around in sugar. Place on cookie sheet about 1 inch apart, as they will spread a little while baking. Depending on your oven, bake at 350 degrees for 15 to 20 minutes.
Tip: The cookie batter is a little sticky, so place a little bowl of cold water next to your work station and dip your fingers in as needed to help control stickiness when rolling the batter into balls.
