Colourful Carrot Slaw – Easy, Healthy & Delicious

Are you searching for a light but filling, healthy but delicious, fast and easy meal? Well, consider that meal found. Enter the 4 ingredient salad that is beautiful, colourful, and just plain good.

This slaw is surprisingly satisfying because of the walnuts and dried fruit, and it’s incredibly quick to make. Think: 5 minutes. It’s on the sweeter side due to the fruit and carrots, but it combines that sweetness with sea salt and lemon juice, making the flavours just right.

The mix below is for one serving, because I just made this for myself. It is easily doubled, tripled, or quadrupled to accommodate for more guests. Just know that this was surprisingly filling on its own, so adjust accordingly.

1 large carrot, grated

1 handful, crushed walnuts

1 small handful, raisins

1 small handful, dried cranberries

Dress with olive oil, fresh lemon juice, and Maldon sea salt.

TIP: I think sunflower seeds would also do well in this slaw if you have them on hand. Also, if you’re craving a little more zest, just grate a little bit of the lemon rind with a zester and add it to the dressing.
